Survival games drop you somewhere hostile with very little and ask a simple question: what do you do first? Water, warmth, shelter, food — pick the wrong order and you do not get to find out what comes next.
The first hour is the whole game
Almost every survival game front-loads its difficulty. Once you have a stable base, the tension usually shifts from "can I survive" to "what do I build next". If you enjoy the second phase more, look for games that let you skip the scramble.
Survival vs. sandbox
Survival games apply pressure. Sandbox games remove it. If you want to build freely without a hunger bar chasing you, you want the sandbox flavour — check whether the game has an optional peaceful or creative mode.
